Here are the Xbox Live options when you're creating a room:

Difficulty (Novice, Semi-Pro, Professional)
Track
Car class
Race length (1-75 laps) You can pick from 1,2,3,4,5,6,7,8,9,10 all the way to 75, and amount you want
Weather (Dry, Rain)
Damage Sensitivity (Off, Forgiving, Intermediate, Realistic)
Brake and tire ware (On, Off)
Language
Player slots
AI opponents
Invite only (Yes, No)
Qualification (Yes, No)

Depending on what difficulty you set the room to, depends on what driver aids people in the room can use. If the room is set to Professional, then it seems that NO driver aids can be used.
